For those doing low carb. I been making these crackers from Serous Keto made from cottage cheese and cream. There are crunchy and sturdy for dipping. Heat oven to 225. Blend cottage cheese until smooth. Add cream and blend until looks like marshmallow fluff. I use a #100 dipper to scoop on silicon mat. Been using everything bagel seasoning on them. Bake 50 minutes and turn pan. Go another 50 minutes. Sometimes takes another 15 minutes. You want them to start turning brown than shut oven off and leave another 15 minutes. I do 1 1/3 recipe to fill my pan. I not a serous keto guy but during the week I try to keep low carb and 18 hour fast a day. Weekends free. This keeps my BS in check.

1 cup (230g) of full fat cottage cheese
1 TB (15mL) of heavy whipping cream

Interesting. I was making a couple successful keto crackers when low carbing. So much that I had to hide them when my adult son came to visit, he would eat them constantly (and he was not low carbing) and in my head I was like, "dude, you have no idea the work that went in to those!".

We're doing a carb-adjust lately trying to drop a few pounds. I've pulled out some of my old recipes. Crackers is one I plan to do. I made my cheddar cheese biscuits again recently and was reminded of how good they actually are. No reason to not make them more often...except the sourdough folks here have me making sourdough here and there now...not keto, but delicious! But hey, refrigeration converts to resistant starch! That's my excuse at least...

Brian, what do you blend these with? immersion blender, food processor? Do you mix the seasoning in with the mix or just on top?

I using a small Ninja food processor. I just put seasoning on the top before baking. Here is his video

 
Another one I saw:

4 eggs
4 tsps. powdered gelatin
4 TBSPS. real butter.

whip together in a blender or food chopper.
spread out on a pan, add what you want on top: parma cheese, sea salt, herbs...whatever. Bake 375-400*F 20-30 minutes, then flip and bake another 10 minutes...check for doneness, continue until as crispy as you like. Cut with a pizza cutter into squares.
