Keto Chanterelle mushroom and Egg Scramble

Easy meal today...

3/8 cup unsalted butter
1/2 large red onion fine dice
1 tsp. salt
1# of Chanterelle mushrooms
2 cloves garlic fine dice
4 drops Worcestershire sauce
Black pepper to taste
6-7 large eggs scrambled

Heat butter over med. heat and sautee onion 5-7 minutes with 1 tsp. salt. Add torn chanterelle mushrooms and sautee until water renders from mushrooms and evaporates. Brown just slightly. Add garlic and cook another minute or so. Add black pepper to taste, and the 4 drops of Worcestershire sauce, stir in. Add scrambled eggs and begin cooking. Flip mushroom egg mixture after a minute or two. after another minute or two, turn off heat and let rest for 4-5 minutes to let the egg cook through. serve hot. A little cream optional.

Thanks jcam! T'was real good my friend! how many grams of carbs are you limiting yourself to per day now? Since I am at target weight, I try to limit total daily carbs below 40-50g per day. Still in ketosis, but not deep like when I was under 20 grams per day.

I honestly now just stick to the meats , veggies , seasonings ,sauces and high protein snacks that are low carb and don't pay attention. Some blackberries and strawberries sometimes. I am more low carb than keto as I also limit a lot of things like cheeses and high fat meat. Some of my keto favs are simply too high in calories for my current weight loss. I'm down now 95 lbs. Maybe 20 to go before I bump up calories to maintenance for awhile then excess to start building muscle. back. It's a process ha
 
That's motivation right there my friend! Keep going! Bet you feel so much better too! I just finished my afternoon walk...2.4 miles today.
