Kansas City style BBQ?

Recently we were at a "BBQ" joint and they said their food was KC style Q.  My question is that they were cold smoking the meat, cooking it in the oven and then reheating it over a flame grill.  I don't think this qualifies as KC style, but if it is slow cooked in the oven, which is the basic concept of a reverse flow or cross draft rig, would it be considered KC style.  I say no, but I may be wrong.  Any comments???
 
Chili's and Applebee's have baby back ribs to order, but neither one has a pit of any kind. So you tell me how they do it..

Good BBQ joints will have a 24 hour staff cooking food on real bbq or smoking equipment. I wanted to apply at a local joint part-time just to see how they do so much and keep it on demand. Unfortunately they have had the same pitmasters for years

As long as it wasn't served in a bucket of sauce, then you might be able to call it KC.. Who knows the true difference, if there is one..

After we ate I walked around the building and there wasn't any type of cooking pit out there just a smoker.  So I am guessing that is how they did it because of the grill marks and charring on my food.  It actually wasn't bad food.  Not swimming in sauce and excellent smoke to it.  Personally I prefer the beer on the deck cooking method.

That is one reason that I do not use sauce  when I smoke meat it covers up all the meat taste and all you can taste is a sweet sauce. I like a smokey meat taste.
