I got a BBQ book from the Green Bay public library and it had some non-BBQ recipes included. I came across a recipe for Hoppin' John. I never heard of it before but it sounded interesting so I did a bit more research and then made this Southern style Soul Food for dinner. It was fantastic! I used some bacon ends from a batch of bacon I made a while ago that was taking up freezer space. The smoky bacon along with the vegetables and rice were very tasty and satisfying. I would definitely make this again. I also made some Jiffy cornbread in my cast iron skillet to go along with the Hoppin' John. I can provide the recipe if anyone is interested. :emoji_yum: :emoji_blush:

Don't know why my pics didn't load on the page but they look like they are at the bottom. 🤷‍♂️

Here you go. Enjoy!!!

1 large onion
3 stalks celery
1 bell pepper (whatever color you like)
1 pound bacon cut into bite sized pieces
1.5 cups cooked black eye peas
1 cup long grain rice
2 cups chicken stock
salt and black pepper to taste
cayenne pepper to taste
1 T BBQ rub

Fry the bacon until it gets crispy. Remove bacon from the pan but save the fat. Add the onion, celery, and peppers to the pan cook until tender. Add the bacon, chicken stock, BBQ seasoning, salt, black pepper, red pepper, and rice to the pan. Cook 10 minutes covered then add the black eye peas. Stir occasionally to prevent rice from sticking. Cook 5 more minutes and turn off the heat. Let rest for 5 minutes. Serve with cornbread.

Thanks for sharing JC! My mom used to make this every so often, and I could never remember what she'd call it. I'd always just say bacon and veg haha. Love them with hushpuppies as well!

That cookbook has a recipe for hushpuppies as well. I am going to have to try to make them now. :emoji_yum:

Please do! I'm so glad my mom's coworker shared those recipes with her. Seriously lit a fire in me for my love of southern cuisine.

Man yeah! A little dash of pepper sauce and I'd be all over that! Looks good.
