Hey all. I used to do some catering and custom cooks years ago before my kids got into every activity under the sun. Back then I had a Peoria Meat Monster which I have long since sold. Now I’m itching to get back into it and am debating on what type of setup to order.
I initially got the itch when I saw the TMG Hybrid while watching YouTube videos. But if a guy is going to spend that kind of money I might as well get something on a trailer, which they can do, but it’s limited to that relatively small size in an offset reverse flow cabinet.
I would prefer, I think, to have a more traditional Texas style offset. So now my thoughts are doing a 250 gallon offset on a trailer with a separate direct heat cooker/Santa Maria style cooker, prep table, and a sink setup.
I want to be able to use this setup for at home cooks but also do some pop ups or food truck events. There is a big one a mile from my house that runs every Wednesday night from April until the end of October that I’d like to participate in. Have been talking to county health department and it seems something like I’m talking about above would check the boxes.
The question that I have is am I missing anything or should I be looking in a different direction? I need to get something ordered soon if I want to have any hope of being able to use it by next spring. Thanks in advance for any insight!
