Okay I may have just got lucky, but I smoked sum liver till my smoked meat balls hit 155!! These are my first smoked beef livers and they came out melt in ur mouth!! Added a little bbq sauce and hot sauce after smoke. :drool
 
Thinking "I gotta try that" and hitting search. That has got us smokin sumthin new or a different way most weekends!! Thumbs Up.
