So I had a bunch of leftover chicken from my cook on the kettle. I threw together these enchiladas tonight. Man that smokey chicken was perfect. I used chipotle chilies in adobo, white onion, olives, and Monterey Jack cheese. I tried a different brand of red sauce El Pato. We really loved them. Here is a pic of them fresh out of the oven.

That's one of my favorite ways to use leftover Q'd chicken, and those enchiladas seem to be just about perfect! I'd be real happy with a couple of those on a plate, maybe a little guac on the side. Like, RAY

Thanks guys. I have to say that this was about the best batch of enchiladas that I have ever made. I could only fit six in the dish because of how much I overstuffed them. Simply delicious. Not difficult in the slightest either. Just a bit time consuming. I will definitely be making these again the same way.
