Found a little pork loin in the freezer yesterday, abou 2.5# and decided this would be a good piece to make a lonzino from. Trimed a little fat off the loin while Mrs. Wurst made made the spice mixture; completly covered him in the seasoning, vacum sealed and put him the fridge for the next 2 weeks or so. Will post more when I get it into the UMAI dry bag and then when it's finished in about 5 or 6 weeks. I posted 2 photos of the current product.
