Sometimes you just have to give in. Had to have some meatloaf!

Formed, spiced, and ready to go out on the smoker

Looks good. I see that smoke ring too. How was it? I haven't smoked a meatloaf yet. I like to bake ketchup on mine...lol, but I never did make them that often, probably because only me and one of my children would eat it. But, the other child loves meatloaf so I'm going to have to try smoking one for her!

Came out pretty good. Used pecan wood. Nothing on top, maybe that contributes to the smoke ring

I haven't used pecan yet. I want to try it! I just got some oak and I may have found my favorite...so far... after trying hickory, mesquite, apple, and peach. I want to try all that I can get a hold of, including some I've read about from NZ and Hawaii.

I don't think I'd do the ketchup in the smoker, at least not until the end. The Pittsburgh area is home to Heinz ketchup, so maybe that's part of the reason it shows up on meatloaf around here...lol. Although, I don't know if I'd want it smoked either.

Looks great

what's all in there?

Sautéed onions, green onions, garlic, red peppers, and celery. Deglazed w/ red wine, some ketsup, worstershire, and spices. And when cool add to meat w/ a couple of eggs and some bread crumbs. Form and cook and there you are.
