I use the recipe I found on the Bradley Smokers site. It starts with a dry brine followed by a wet brine. I only smoke for 3 hours with Alder wood pellets and it seems to be plenty for me. Though I’ve seen many recipes that call for smoking for 12-18 hours! Which seems kinda overkill…but what do I know?
