Hello y'all,
My name is Mathew and I reside in Hutto, Texas (north of Austin). My wife gifted me a Masterbuilt 40" electric smoker (model: 20070215). I popped my Smoking cherry on a brisket. My best friend and I watched youtube videos of Franklin...of Franklin's BBQ. The brisket was the best I've ever eaten, and a guest of ours, that has eaten Franklin's BBQ, stated that my brisket was better than Franklin's. I've recently smoked pork ribs, and got nothing but glowing remarks. Looking forward to smoking other meats and experimenting with recipes/methods.

I'm wondering how I can get around re-filling the wood chip tray every 1 to 2 hours. Some people use the AmaZen maze tray modification with a mailbox, but I like using chips, and don't want to use pellets. I'm thinking that modifying the chip tray may allow me to load more chips, but wondering if it will just produce more smoke without extending the smoke duration. I also have questions about the water tray. Would using other liquids affect the meat? Or is water used just to keep the cooking area humid? Seems like the water level doesn't reduce much, but hard to tell with all the drippings fallen into it.
 
I'm not an electric guy, but if your chips are staying lit, you should be able to modify for more chips.  I've read mostly that folks have difficulty keeping chips lit.
