I've been smoking for years in my weber kettle and while that has produced some pretty good results, I saw a masterbuilt XL on clearance at Wally World so I picked it up. When I was seasoning the grill the wood chunks started on fire so I started looking for mods and that led me here. This looks like a great resource!
I currently have 3 lbs of chicken wings in the smoker to try to get a handle on temps. I replaced the wood pan with a cast iron skillet and put a giant roaster pan full of water in there for my water tray. I have a 4 lb pork butt dry brining in the fridge tonight that I'm going to do pulled pork tomorrow.
