Hello! Thanks for the introduction, I am looking forward to reading and sharing ideas on the forum. I live in Fort Smith Arkansas, one of the hottest spots in America during the summer. I was challenged to build a smoker for our men's group at the church and started the search for information on how I might achieve this task. After looking at several forums and various websites, I found that many prefer the reverse flow smoking systems. Many of my materials have been donated and yet the expense of this build is still on the steep side, but minimal to the price of purchasing a smoker of this size. The chamber is 36 inches in diameter with .25 in thickness on the steel. The length of the chamber is a little over 9 feet. The firebox is made of 3/8 inch material and is 2 feet X 2 feet X 2 feet. The separator / drip tray is made of .25 inch flat steel and the smoker has 4 slide in and out racks. The racks are made of 3/8 stainless steel rods inside of 1 inch 11 gauge steel tubing for longevity. The exhaust is made of 8 inch diameter .25 inch thickness pipe. After seasoning the smoker, my first smoke project was turkeys for Thanksgiving. The finished product (turkeys) was amazing, fall of the bone, and juicy meat. My biggest concern was temperature control, but had even temps of 225 to 250 across the smoker throughout the 9 our duration smoke. I have read many of the responses to your recipe on rub and sauce, and are excited about learning more. Due to the large size of the smoker, it is not something that you would fire up every weekend without having enough meat to fill it up to justify the wood usage. My next project is to do brisket, ribs and Boston butts for Christmas. In many cases, I usually read about the experiences of many others and their successes before I attempt it myself, that is what I am going to enjoy about this forum. Learning from successful people is what I am all about and maybe someday I will have some professional advice to give.
