    ok sorry it took so long to get back to you, bar business has been crazy !!!!!!

    Here is my Brine recipe which i use for everything from fish to turkeys and everything in between.

    5 gallon plastic bucket with lid
    1 and a half gallons of water
    1 and half cups non iodized salt
    1/4 cup sugar
    1/4 cup brown sugar
    2 tablespoons of minced garlic
    1 teaspoon of onion powder
    1/2 cup soy sauce
    3 teaspoons of meat tenderizer
    let soak in brine in fridge overnight or up to 48 hours.
    you can adjust the salt content to your perfrence
