Just built my first UDS

Howdy,

I am new to smoking and just built a UDS, thanks to all of the great info on this sight. The advice being given out on the threads here were an extreme help! I smoked a rack of baby back ribs last night and am excited to get a lot more use out of my smoker. I am located in Texas.

I have a beginners question for some of you pros: When you smoke on a UDS do you prefer to do it in the middle of the grate and just add on the additional ~50 degrees or try to set meat to the side closer to your thermometer. Mine has a 4 inch stem on it.

Welcome aboard, Aggie!  Glad you joined us.  You've found a great place to learn and share ideas.  Lots of friendly an knowledgeable folks here who enjoy helping one another.  Good luck with that UDS, stop over in the smoker forums to get your specific questions answered by other UDS users, and just ask when you need help and you'll get plenty.

I use a Mavrick 732 and place it as close to the Meat as I can . That way I know What the temp is where the food is.
