Well, yesterday started out fine. But after 30 minutes in the smoker. I started loosing temp. After a quick check I found that the element crapped out. So the chuckie ended up in the oven.
I let it go at 275 until it hit 205 IT. Then set it aside to rest. I made gravy out of the drippings and beef broth. And added a "few" mushrooms. Then thickened it up with a corn starch slurry.
Plated up with mashed taters. Overall, the meal came out great!
