Well crap, I'm down to one pack of bacon in the freezer, so I thawed a Costco belly and here we go. See ya in a few weeks.

18 days later... the weather the last few days has been fickle. Threat of rain etc etc. Last time I bucked the odds I lost so here we are.

Gave em a fresh grind of pepper, fired up the pellet pooper with straight cherry.

Low smoke (160ish) for a few hours and then up to 200 or so to finish. See ya in a few hours.
 
Done! Let them ride at 160 to the finish. I may or may not have sliced off a few pieces hot of the smoker.... Gonna let them rest in the oven for a while then into the fridge til Monday for slicing and bagging!

Ok.. so I noticed this thread was posted under cold smoke bacon. Mods move it as needed. Any way, here's where we ended up with the nooch. Man does that stuff smell cheesy.

When I was mixing it up all I could think of was cheesy popcorn. Not sure how to pair it with anything so I'm going to do a basic hot dog bun with some diced onions and mustard. Gonna walk the 4 leggers and get myself right with the world. Enjoy your day!
