Since I'm going to start to learn how to make bacon and sausage and do some cold smoking of cheese I figured I might as well take the plunge. Based on all the great reviews I ordered an AMNPS (package #3) last week. Well it showed up today in all it's glory along with a plethora of smoke flavors. I'll put it to good use in my WSM but I'm really chomping at the bit to get some cold smoking in....Living in the south means that I'll need to wait a while for the summer heat to wear off. Oh well, that just gives me some time to make sure I've got this thing working properly.

 
I think you could cold smoke mozzarella cheese.  My daughter and I made mozzarella last week then smoked it on my miniwsm at around 250, but you can cold smoke cheese too, and apparently mozzarella can be smoked at a much wider range of temps.  Someone correct me if I'm wrong ...

Cheese should not exceed 80* for smoking. I smoke mozzarella all the time and try to keep the temps down around 60-70 for best results
