Maybe everyone knows this already but it was a first for me.
While browsing through The Craft Butchers Pantry and looking at casings I noticed they now have 18-21 mm tubed sheep casings,

I made up some Italian sausage to replenish freezer stock and figured while I was at it I'd cure and stuff some of these and see how they worked.
I was very happy with them, I did have 1 blow out in four pounds of sticks, which was my fault for not paying attention. I even twisted up some cocktail size wieners just to see how they twisted and no problem there either.
For what it's worth, I'd recommend them.

One of the stuff's on my horizon is Hot Italian Sausages for Appateasers for BBQ's.
But also for Snack Sticks.
Beautiful sticks you made. Are they smoked?

Yes Sonny, I smoked them for about 4 hours using pecan. If you make them I'd suggest grinding the meat finer, these were a little lumpy since it was the same meat that I used in my fresh sausage.
