July 4th Smokeouts

So, who has plans to smoke it up this 4th?  Debating between pulled pork and brisket over here.
 
I've got a couple of racks of baby backs, one is brining right now for bacon on a stick, might do some wings (my freezer is getting low on wings) and maybe a fattie for breakfast while I smoke everything else. Who knows I have two more days to come up with something else, I like my smoker full!
 
30+ pounds of brisket and 30+ pounds of butts going on the smoker in about 8 hours or so!  Happy 4th!

Doin' a pork butt (7 lb.) for the 4th as a trial run (first butt). Then about 25 lbs. the weekend after next. I'm sure I'll be smokin' stuff in between as well...Yep, I'm addicted!!

Just me and the Mrs' this year so I thinking a Fattie! The wife has had me alternating between Pit Chicken, Pulled Pork and Ribs for awhile. Although all good, I need a change of pace. I plan to make Beef Short Ribs when all the Kids get home in a week ...JJ
 
I'm thinking breakfast fatty, lunch pork, dinner brisket.  Or maybe I'll mix it up and go turkey or chicken.
 
Doing 3 Butts for pulled pork for the kid to take to work. Looks like I'll have to throw on a couple of Racks of St. Lou's on there also. Sounds like I may be dodging some off and on showers for a while.
 
Since my boyfriend will only be home for the day and I haven't retrieved my meat from a friend's freezer due to the fire evacuation, I'm doing stuffed mushrooms, smoked deviled eggs, ABTs, pork riblets and either chicken leg qtrs or boneless pork chops. 
 
Heading to a buddies at 5 tomorrow night for the fourth. Prepped the brisket last night. Just started the smoker and am waiting to get it up to temp. Trying Stubby's lump coal and some pecan wood. Should have the brisket in the smoker in a half hour or so.
 
2 slabs of ribs, grilled corn on the cob, grilled asparagus and pasta salad. Finishing it off with homemade ice cream. Looking forward to it.

Well, it's gonna be a good 4th!  I have brisket and a breakfast fatty on right now.  Gonna throw brats on when the fatty comes off, and finish those on the grill for lunch.  Brisket will be the all day affair.
