Hello all, doing an 8.84 lb brisket and 2 racks of bb ribs. My first time using lump charcoal. also hickory chunks for the flavor. have started pics for qview, will post them when all is done.  Wish me luck!  I have picked up a bunch of tips here, thanks for all the good info from you experienced smokers.  Oh, just about forgot, also about 3 cigars!  Steve
 
Hello again, smoking and eating done.  I will try for some Qview.  First let me say thank you all for the tips I got!  I learned so much.  I used Frontier brand lump charcoal.  This is the first time using lump.  It worked wonderful!  I am now sold on lump for hot smoking.  I had no trouble maintaining 225 deg for the whole cooking/smoking time.  A first!!!!MyBare Brisket

This was the best brisket and ribs I have ever done!  I used lump and hickory chunks and cherry chips.  Next I will buy some cherry and apple chunks and use them with the hickory.  Lump for me from now on.  Thanks again for all the tips I have learned here.  All of you are so knowledgeable!!  Steve
 
Looking good!  I use lump as well.  I threw in some briquettes the other day to even the heat, and almost threw up when I smelled them burn.  Can't believe I ever used them.  Never again.
 
Thanks Sqwib, I think so too. No more briquets for me. Lump for hot and am deciding on which of Todd's devices to get for cold smoking. Decisions, decisions!  Steve
