I finally got a chance to use my new smoker! I was really excited, and this was my first smoke in 2 years. Everything turned out really good. The brisket was juicy and tender and delicious, and the ho links were out of this world. I had my parents over for dinner and my dad was the one who taught me how to smoke when I was a kid... I think I taught him a thing or two this weekend. The brisket took about 7 hours. smoking at 225, I got the brisket up to 187, and it rested for 2 hours. I smoked the hot links for about an hour. Used mesquite on both. I used a wireless meat thermometer for the first time... it felt like cheating, but it came out perfect!! Oh, and the brisket came from my dads ranch, hand picked and feed out.
