I have looked at most of the threads on how to make jerky .

But i still have one question ??? do i use my water pan ?

This weekend will be my first try and i have alot of ideas , Thanks to all the threads !
 
I never use water. You are trying to take the moisture out of the meat not put it or keep it in...just do not over dehydrate it and use the bend test. And if you have read all the post on jerky then you know what that is...Good luck..
 
no water pan here either   120 deg for 1 hr(no smoke) then bump temp to 150-160  and add your smoke  mine usually go about 5-6 hrs  after i bump up temp
