I bought several cornbeef points when they were on sale after St Paddy's day. Can I use them to make jerkey ?

SOTFG, IMHO the point is too fatty for jerky, a flat cut would work well for jerky.

Someone on here made some jerky from corned beef recently...cant remember who. I would soak them in the fridge overnight with a few water changes or it will be super salty. I agree with @crazymoon the point will be too fatty - jerky and fatty cut dont jive..the fat can go rancid.

As Sandy said, jerky and fat don't mix. Even if you use a flat it needs to be trimmed free of all the fat you can trim.

Thanks everyone. I think I will just cube them up for burnt ends. Sounds like that would be my best option.

I did a lot of experimenting with this. I have a post on it somewhere. Soaking it and changing out the water is essential. Also, cut it all across the grain or it will break your teeth.
