Jerk chicken

I have found a recipe for jerk chicken that I am going to use but u have a few questions.

I saw someone mentioned putting allspice berries mixed with pellets in the bottom. Anyone try this??? Work okay? Obviously this is in place of pimento pellets.

also best way to crisp up the skin. I will be cooking chicken at 225 till 165, then throw on hot grill for a few minutes??? Suggestions?

I use a disco disco method on skin
Peel skin back from the flesh leaving a tag attached. Scrape fat from skin and place back on flesh,

I have jerk pellets. Used a couple times in the smoke tube. Nice flavor.
If I didn't have the jerk pellets, I would use oak pellets. Not a clue if allspice berries in the smoke adds flavor.

I have Walkerswood jerk seasoning. I like hot and spicy, but Walkerswood will scorch my nostril hair unless used sparingly.

Thanks for the credit but scraping the skin is not "mine" it is an old competition trick.

You can crisp the skin by scraping it and putting it back or your method of crisping it on a grill works too.
