Thought I'd do a copycat of Jeff's Maple Syrup whole chicken only I just did thighs.
Brined overnight,
1/2 gal water
1/2 cup kosher
1/2 cup brown sugar
Rinsed and slathered thighs with Pure Maple Syrup and Jeff's Original

Back in fridge for couple hrs.
RT 590 with Competition Pellets set at low smoke for 1/2 hr.
Temp raised to 380*
Thighs to 170* and removed

Air fried some steak fries and a Spinach salad.

Pretty simple meal. The chicken was super moist. Will certainly do again. Maybe even inject a few with syrup just for a trial.
 
That's perfect. I too have found cooking thighs in my Pellet cooker must be done at 375° or above. That recipe sounds good.

As for the crackers in the rub... does it help keep the moisture to a minimum ??
It does, not near as much clumping. Probably wouldn't if kept in fridge either.
