Jeff's Jalapeno Pineapple Pulled Pork taco toppings?

I was reading this weeks newsletter and tring to determine what Jeff used for toppings in the picture of the pulled pork tacos. Cilantro? Almost looks like feta cheese... Anyone know?

Anyone know... I think its cilantro and red onion.  I can't tell what type of cheese.

That looks like cilantro and red onion to me. Those make sense with the meat too.

I'd guess it's cotija cheese just from the look. It's a Mexican dry cheese kind of like Parmesan.

Could be. It's easier to get Queso Fresco in Tulsa than it is Cotija, though neither is difficult.
