So I’ve got the new smoker going for the first time. Got some pork ribs and a 2.5kg brisket in there. A few lessons learnt about shelf placement on this smoker. Obviously as it’s my first build it’s totally trial and error. Definitely need to weld in some pegs lower down to take the top rack so I can get to the meat without removing the lid to spray.

After a bit of messing about with the doors it’s now holding a steady temp of around 110-120c

fingers crossed. Will keep you all posted. Few pics attached
