Harvested a decent 8 point day before yesterday. He is not the king of my land! Will let it calm back down for a few days and be back on it! Gonna smoke some venison tenderloins and maybe a brisket an hawg of some type. You know me, I like to share pics. Love the SMF site. Just awesome. WHAT IS THE PERFECT INTERNAL FOR THE TENDERLOIN??? Not back strap but tenderloin. I don't like it bloody.
 
Venison tenderloin is a very small cut of meat. Better watch the INT like a hawk, it will not take long to cook. I like 128*INT....about med. rare. Could go 130ish....
 
HI, You could open it up and stuff it like a pork tenderloin also. Cream cheese,chives ,mushrooms etc.
