Trying my hand at some pork butt...got 2 from Sam's, about 18lbs total before cooking.
Fired up the smoker around midnight last night, got it up to temp and the guests of honor go on around 1am. Air was pretty cool and dry last night, fought a little getting TBS to show up but finally things smoothed out. I even managed to catch about 3.5hrs of sleep in between.
Used Jeff's rub and Slaughterhouse Spritz. I don't recall how many times I spritz'd, I tried to minimize the openings, maybe did it 4 or 5 times total. Put the butts in foil pan topped tightly with foil when they got to 160. Checked on them at 180 and the bark was really soft so I took them out of the foil (thinking this was a mistake at this moment) to firm everything up but I think it's just stalled out again at 185. Live and learn.....
Here's the pics, I'll thrown some more up when I pull them. I'll be using some of the drippings and SoFlaQuer's finishing sauce.

I also experimented with my thermometers...ET-732, ET-73 and Wally World cheapo...
732 is in rear middle-ish, 73 is front left-ish and cheapo is hanging in the smoke stack, I was wanting to see how close the stack temp was to the grate temps (since extension is right at the grate) as ell as a front to back temp comparison. BTW, them on the front of the smoker never went above 200, hovered most of the time around 175-180.
