They turn out great! I don't go too heavy on the smoke, but give them a nice flavoring for about 45 mins. then sear them on the grill. My wife just won't want them because she can only stand sooo much smoked food in a week and I have a feeling she has already had her fill this week - but I have yet to confirm that suspicion.
 
Nothing until Monday. Monday morning, we'll be baking (not smoking) 27 butt hams and smoking: two whole boneless porkloins made into pork-u-pines, probably some chicken breast tenders or thighs, and anything else that is reaching it's shelf life and has been marked down for quick sale.

It's nice to have a 16 ft. smoker.

That bird looks pretty good, but I'm drooling over that salmon. I just smoked some on Tuesday--I got two bites before my wife got hold of it. Of course, fish like that is $6.00 per pound here in Oklahoma. So, my fillets were only about five or six inches long.

I have so much Steelhead I don't have freezer room for it all. We had amazing runs this year. I do a lot of salmon but Steelhead, well, it's better than Copper River Salmon to me, great fighters too. Granted, they are of the salmonid family, these Steelhead are ocean going rainbow trout...totally full of juicy love.
 
I have been informed by herself that it is Tart making day Saturday so I have been informed that "We already decided , don't you remember" That We picked this weekend to make House butter, Christmas tarts, Cookies, Macadamia Nut Cake, Stolen and Queen of Hearts tarts.

Sunday I have been informed is when "We decided" to bake all the Pies for Christmas day. I don't remember deciding any of this stuff but then again It was probably one of those times I nodded to her when she was telling me stuff I was in the process of tuning out.

Who am I to argue.

We always order in a "You bake-it" fresh Pizza on Tart baking day which is a bonus. I like to put some extra cheese and meat on it then bake it on the grill. So thats almost like I'm smoking something.
 
Just got home from work and I'm going to slice/cure/season 4lbs of eye of round for a jerky smoke tomorrow, I'm really wanting to do a fattie tonight to get tomorrow kicked off but it's rained all day, 35* and still raining, it's dark, I'm tired, wifes feeling a little under the weather, there is a good movie coming on in 30 min. ah **** I've got to go get fattie fixins bye yall!
 
smoking 4 Roasting Chickens and beef roast. I got ahold of a spice today bacon spice. i think it would be great in summer sausage I will try it and let you know.
 
wife is anti-smoked food for today, and I am low on propane & dont want to get a fresh tank with the WSM waiting in the wings.


so carnitas it is. going to get a 3# pork butt that ill simmer in lard. Also hoping to get some live blue crabs for some crab cakes.
 
Man oh Man that a meal that you would almost have to pratice to eat. By the way do you have a single sister so I could get into this family thingy.

got a nice 4# pork butt BRT (boned rolled and tied). $1.29/lb. Also got about 3# of live blue crabs, they are in the stemer now. Gonna make some crab cakes when I pick the meat off them.

Cubed butt will be simmered in 3# of lard for about 3 hours. then turned into some tacos on corn tortillas with cilantro, onion, and some hot sauce.
