Lots of folks here with recent success with just S&P.  I started my day with one rack of St. Louis ribs and a chuckie.  Salt and pepper only on both smoking for 4 hrs so far at 240.  The probe is in the chuckie and reading 158 at the present time.  I'm taking the ribs off at 5 hrs, and letting the chuckie go to 195 IT.  In the mean time, I did some chicken on the kettle with the Vortex!  I put 2 breasts and 5 thighs on and checked them after 30 minutes.  The thighs were already at 170+ and I yanked them off! Will post pics later, having computer issues.

I would have both for dinner! Looks tasty!! I prefer my chuckie pulled personally chuckie sammiches are great! I pan them with French onion soup and seal them up but they still take along time.

Thanks hardcookin!  Not busy at all, ribs 5 hrs without touching the smoker, the chicken took 40 minutes on the kettle.

Thanks b-one!  I've never pulled beef, but I think it would need to go more then 195.  I've done a few fall apart briskets that could easily have been pulled.

I need to do a chuckie on day...I keep forgetting about that cut of meat. Looks very good Mike. point.
Thanks!  I forget the chuck too, I am always on the lookout for tri tip!  That is my go to  for beef!
