Italian sausage meal

With a couple weeks off I’m looking forward to a lot of cooking. Threw this together today for our supper. A nice antipasto salad with an Italian sausage sandwich. Antipasto was fresh mozzarella, red onion, old world pepperoni, kalamatta olives and grape tomatoes tossed in olive oil and a touch of white wine vinegar and lemon juice. Served on some romaine , yellow bell pepper and Parmesan. Sandwich is garlic chaffles, fried onion and peppers, Italian sausage patties, lots of mozzarella and marinara. Garnished with a little red bell pepper , olive bruschetta and a hot Calabrian pepper.

I need to try that antipasto.
Love it. Also like adding in cubed smoked provolone, pickled artichoke and pepperocini peppers. Just went with what I had around today. For the meat nice salamis and soppresata are nice too.
 
I love antipasto!!! And we all know that I'm a sandwich lover.....and that sir is one fantastic sausage sandwich!! Sausage,peppers,onions motzarella, marinara!!! Yep ! Very very nice! I can't wait to see what you do with your time off. I know you mentioned beeing slammed with work lately..enjoy that time!

That's about as colorful a plate of food as I've ever seen Jeff, comes up just a hair short of being too pretty to eat, looks delicious! RAY

Mighty nice looking sammie and salad! Can you provide the recipe for the garlic chaffles?
Mix this all together and cook in a mini waffle maker. Makes 2. I usually upscale and make 6 or more at a time. I love garlic so love to add a little minced garlic in this too. Aside from the garlic this is a pretty base Chaffles recipe and you can make many flavors with it. An example would be I substitute Swiss cheese for the mozzarella and add caraway seeds for rye chaffles. 1 large egg
1/2 cup finely shredded mozzarella
1 teaspoon coconut flour
¼ teaspoon baking powder
½ teaspoon garlic powder
