Italian herb marinated, grilled salmon kebabs with a basil pesto drizzle

Kept it simple on the grill today. We wanted salmon so I marinated one cubed up filet in olive oil, Italian seasoning and crushed red pepper. Added a bunch of lemon slices and sliced up a red onion. Skewered it all while a chimney of coals got going on the Weber kettle.

Used my Weber delicate food platter and sprayed it good with Pam. Total cook time was maybe 8 minutes tops. 3-4 mins per side. Definitely don’t want to over cook. These came out just right.

I stole the primary idea from food network Saturday. Valerie Bertinelli did a version of this and I liked the idea. Only I didn’t baste. Once these were dont I simply drizzled them with a basil pesto. Usually this is home made but I bought this from costco and it was just fine.

They were so good we got no plated pics. Covered this in foil, drove to lil sis’ house and we inhaled them. Definitely will do these again!

Looks pretty dang tasty! I've been eying a Weber tray for the new weber and this doesn't help my vision at all.......

Pesto pairs so well with Salmon. Horseradish does as well. I do it all the time. Never thought to cut them into kabob sized pieces. It all looks amazing. Nice job Saint!

I didn't realize how much until yesterday. The pesto truly made the dish. It was good without the drizzle, but that pesto put it on a whole nother level!
you are SO right. Made pesto salmon in the oven a couple times and it was outrageous! Very easy very good. The best kind.
We'll definitely be pairing pesto w/salmon again....soon!
