and I didn't take any pics.  Too many folks coming and going to allow me to pick up the camera.

Just got home from our annual holiday party. Dale and I cooked five gallons of Dale's special Ranch Style Beans, 36 racks of St. Louis style ribs (only 3 left), 4 whole pork loins (1/3 of one left), a brisket, 8 pork chops cut about 1.5" thick, and approx. 10 lbs. of hot links (none left). Was up @ 5:00 fixing loins--tired now and hopeful I'll stay awake for the Insight Bowl.

This is what I got to bring home for leftovers: 

1 pork chop

1/3 of a whole loin

a couple of ribs, brisket and loin scraps from the bottom of the roasters

Actually, pictures of the smoke would be redundant to ones posted for the last two years.  Hope everyone has a great New Year's celebration!

It is a beast!  My brother built it off of a design my father came up with.  It is a little over 16 ft. long and has the firebox in the middle.  Essentially it is two smokers in one.  The walls of the firebox are carried near the top of the smoker, while the inlet to the exhaust stacks are placed below the cooking grates.  I like to think of it as a variation of a reverse flow since the smoke has to travel down rather than flowing up like it normally does.  Others describe it as a "down draft" design.  Whatever you wish to call it, for my money, it is the simplest design achieving even temps and quality smoke. 

A buddy has studied the smoker and now builds his own variation commercially.  Right now, he is receiving enough orders to keep two welders busy.  (He does build a couple of other products in compliment to the big trailer smokers.)  Here's a link to what some of his look like:

Well, it does have a sink and an 8ft. table on the opposite side.  I guess you could clean up and stretch out if you were so inclined. 

On another note, Bill does make awesome smokers.  He really "custom builds" whatever the purchaser wants.
