I just picked up a Oklahoma Joe Highlander Horizontal Smoker to play with. Had never smoked meat before, but every time I was walking thru Lowes this smoker caught my eye. Looked at a few different ones at a couple of places, did some research on them and decided to get one. It has thick enough steel that I can repair, replace or modify it easy.
I got it together this week, and have smoked on it three times so far. One precooked turkey beast, & two Tri-Tips.
We are getting rain here now, haven't had any for a few years it seems, and I don't have a patio cover up yet, so lots of time to look around on this site for some modifications. I added a 90˚ to the inside of the stack, down to the grate, added a second thermometer, made a deflector plate out of some 6"x18" aluminum cut to 16.75", and added two steel 20ga 6" x 18" trimmed to 16.75" tuning plates.
I am in Southern California where the rain never falls, or so it seems. I have mostly BBQ'ed Tri-Tip, Chicken breasts, burgers & dogs.
So the smoker will be a learning curve.
