First attempt at smoking ...put a 4.75 lb Butt on this morning. Using Charcoal Briquetts and Hickory chunks for fuel.....Keeping temp around 235.....been in "The Stall" for about an hour now at 167 degrees.

Just wanted to thank everyone for sharing their knowledge and experience. Sure helped a ton knowing what to expect beforehand and it has made it very fun.

Wow! Great looking unit, just not dirty enough, lol!  Well, how did it come out, any finished Qview?  What internal temp did it get to?  Stalls aren't fun, but when you know it's necessary, it makes it easier to tolerate!

Thanks. LOL....well...i got it to 190 degrees internal...then seemed to hit another stall for about 45 minutes or so...no breeze bright sunchine and around 80 degree weather...beautiful day. Anyway...just stayed with it until internal temp got to 200...wrapped it in foil and into the cooler with towels for an hour while i put a few chicken wings on...an hour later pulled the butt...beautiful smoke ring and moist. we were all sitting there gorging ourselves when it dawned on me...i forgot to take pics of the finished product !!!! Very sorry guys...ill definitly snap them next time before and after pulling. Only thing not perfect was i got just a touch too much salt in my chicken rub for my taste but they were still very very good. Thanks for all the info. Couldnt have done it withoout you guys
