so I have an idea to try as a pork shot variation. I’m going to use kielbasa with the bacon wrapping to create the cups. I plan on stuffing them with a variety of fillings. Cubed Spam is going in all of them and I have cream cheese, sharp cheddar, Serrano chili, carmalized sweet onions, and even some pineapple for some different flavor profiles. I’m going to be doing these tomorrow along with some drumsticks and a tri tip. Should be a great cook.

These sound great, just 1 more thing to add to my list.
 
I’m really excited about trying these tomorrow. I plan on using some of those really tasty kielbasa from Sam’s club. My favorite bacon is on sale this week so it was the perfect time to try these pork shots. I’ll have pictures tomorrow.

The onions starting to caramelize, the shot ingredients, and the shots assembled. Such as they are. The bacon didn’t make really good cups. These are going to be messy.

So here is the finished product. They passed the taste test. There is quite a bit involved with the assembly but they were worth it. Now the Tri Tip is resting and I have some drumsticks finishing up on the smoker right now.
