I found this tucked away in my fridge and want to do something to it. Would this be worth smoking? It's 2.20lbs and is already sliced. I was thinking of tying it together, to keep it from falling apart, make a brown sugar type glaze, cook it on a rack in a narrow pan for periodic basting and smoke it at 225 for 90 minutes or so.

Thoughts?

Thanks

"Double Smoked Ham"

Reheating via smoking with a glaze. Should be able to just set it down, no tying necessary (sorry, saw it was boneless, string may help there for transport and movement). But yes, highly recommended! (assuming it's a pre-cooked ham)

Here is how I did my last one:

Well, this was definitely worth smoking and it won't be the last time I do this! I was in a hurry to get things going, so I ended up using my own rub in a slurry of maple syrup and brown sugar. This really turned out good and was gone before I knew it.

I set my RecTec to lo temp/high smoke for 45 minutes and then bumped up to 225 for about an hour and finished the last 15 minutes with it wrapped in foil. I mopped it a few times while at 225. It was the perfect balance of smokiness (apple) and sweetness. I had plenty of juice in the pan to mix thoroughly when done.

Tried to get as much rub in between as many slices as I could.

Crown maple syrup is great

Good thing I tied it to hold it together. Was not dry at all.

That looks amazing! Good work

That maple syrup looks pretty good too. Bourbon barrel aged? Can you taste the bourbon?

Yes, you can taste the bourbon and that's what makes this syrup so good.

Thanks

Glad it came out for you , but we knew it would .
My son just brought home a bottle of the bourbon age and the vanilla . Both good , but that bourbon aged is fantastic .
