I smoked some bone in chicken thighs yesterday. They were GREAT. Today I had one for lunch. I would swear the smoke flavor intensified. Anyone else experience this?
 
I get used to the smoke the day of . I notice more the next day , but it's the same amount of smoke .
 
Part of your perceived increase in the smoke flavor is your not being involved in the smoke and breathing it.
You're breathing it for hours and you become desensitized to it, and smell is a big part of taste.
The next day after a shower (hopefully) and hours away from breathing it you're not as desensitized and can taste more of the smoke flavor.
 
It is called going Nose Blind. Spend all day Smelling the Smoke Rolling, Thanksgiving Turkey Roasting, Pot o' Chili cooking, Chicken Soup Simmering, Etc., and the meal, that night, tastes bland or disappointing. Have Leftovers a day or two later and the food has an " out of this world " intense flavor! The Olfactory nerves can become overwhelmed and desensitized with long exposure to the same scent and their associated flavor. I have Smoked meats a day or two out for awhile. Thanksgiving Turkey has been made on Wednesday for a couple of years now. Everybody enjoys it more and less work for me day of...JJ
