Wow, lots of really good information here and I'll REALLY be sure to be incorporating it into my next smoke - as in it's going into my DB recipe as a Next modification!!! I'm starting to appreciate the post cook - sauce values. Thanks a bunch for the advice chef jimmyj!

Alot of times , it doesn't taste as good to the cook as it does to others . If they like it you're doing something right .
This is true with me. I’m always my harshest critic. Food to me always tastes better when someone else has made it for whatever reason. My friends will rave about something and I’ll just think it’s ok. Happens all the time.
