Is a Snack Stick a Sausage?

Thanks for sharing all of this Sonny. What temp and for how long did you smoke the sticks?

Started at 140 degrees, and stepped up 10 degrees each hour to 180 degrees.
I had probes all over the place because it was a good time to test them.
When the wienies hit 155 degrees internal temp, I pulled, ice water dipped, and racked for two hours.
Then separated, bagged, and refrigerated.
They tasted much better the next day, to me. But my pooch likes them any way he can get some nibbles.
 
Well Sonny it looks alright to me, my secret is I refuse to use casings again ;)

Check out Bear's unstuffed sticks, they don't come out looking as purdy but they sure taste good! Also this is what I've used for 'snack stick' stuffing before:

You get the idea, it holds about a pound, and you can use that. For a bit bigger then slim jim sized stuff. You get the idea, it's not like a huge one..but it'll do and I've used it for stuffing summer sausage casings.

Looks great, Sonny but, yeah, I think you would do better with pork over the cured bacon. Big like for a great start!
