Hi all, been lurking around this site for a while and decided to post a hello. Name is Tim and I've been smokin and barbequeing for several years but have gotten real serious with it the past couple. I live and work in upstate N.Y. In the fingerlakes region. I've used charcoal, stick, gas, and currently do most on a Bradley 6 rack digital. Like to do pork butts, brisket,chicken, ribs, but I think my specialty is my pastrami from scratch.
