Increasing Humidity

Hi guys

I am currently curing some salchichón, fuet and chorizo in a wine fridge.
I had a second hand fridge all set up with humidifier and temp control, it went fine in testing but after 3 days of running it’s now not working so I am having to use a friends wine fridge.
it’s a tight fit to fit everything in and now I am having issues with not enough humidity.
Anyone have any ideas how I can increase the humidity in the fridge without the use of a humidifier??

I currently have a bowl of water in the bottom of the fridge but it doesn’t seem to be doing a lot.

Need more humidity ?? Make the water pan bigger in sq. in.... More surface area will = more humidity...
 
Take a cake pan or similar pan, as large as possible but still fit in the bottom of your fridge. Place 8 to 16 ounces of ordinary table salt in it then add water to just cover the salt. This will keep the humidity @ 75% RH.

I can’t comment on the scientific reasons for this, I’m definitely no scientist, but this is the way Rytek Kutas
recommends doing it in his book and this is also the traditional method for calibrating hydrometers. Place hydrometer In a sealed container with a salt solution and the hydrometer should settle @ 75% RH.

Use distilled water when making the slurry... Tap water may have salts in it that will screw up the salt slurry balance and throw off the humidity.....
