I have a popular electric smoker from a popular manufacturer. The problem is as soon as I plug it in, the element starts to heat and does not stop. Great smoker with a flaw. I saw in a previous thread showing my smoker with an incandescent dimmer switch wired in. The thread was titled,
Cheap electric smoker control - Analog
Reply #19 was by "daveomak, Davomak, how did that work for you?
 
This is what I use. It is a router speed control. You can set it to Hi, Med or Low. Bought at Northern Tool. Works great.

If you operate the element at lower than full power it may, or may not, get hot enough to ignite the chips.
