We did a pretty interesting take on potatoe salad. Roasted radishes, parsnip, and turnips, all covered in olive oil. Added 8 cloves of garlic, thyme, rosemary, roasted at 400 for about an HR. Then combined in bowl with mayo,dill weed, and some pickle relish. Boom, roasted root vegetable "potatoe salad". Even my kids ate it, 5 &12.Thanks, it was a fantastic meal.
