This town is just under 1hr away. FD are running... 10,000lbs of BEEF! Yep... 10,000lbs. Not a typo. My Dad has gone to these in the past and was just talking to me about this last night and it pops up in my feed (thank you android I guess). Beef gets wrapped well in foil, covered in a layer of sheet metal, then covered with the dirt that was removed. Comments in the feed say to get there early as it sells out fast. Sandwiches went up unfortunately and now cost $5.50.

Wow! I've seen B&W pics of something like that at LBJ's ranch, but nothing from this century.
So cool! Wish I was there to taste it.
 
10,000 pounds, good Lord! I can't even imagine that volume. Tried and true cooking style, sort of a massive Caja China box. What a cool thing.
 
I'm currently reading Black Smoke and it blew my mind how big the smoke trenches were described. Seeing one from our century is super neat!
 
My first thought was " that's awesome "
My 2nd thought was " I can't even begin to guess how much 10,000 lbs of beef would cost"

ok.. That is cool... But I'm confused on where the hot coals went that were in the ditch... They surely weren't standing on top of them when filling with meat...
 
I've enjoyed this for years! It sells out fast for sure. I'm out in that area weekly for Mennonite produce and also Planktown Market for meats, cheeses and spices.

My Dad used to work of a plumbing company the owners family owned a 2400 acre cattle ranch on the CA coast. Once a year they would cook two full steers in the ground.
They had this huge steel locker buried in the ground. And a massive basket that they'd fill with oak wood.
After burning it down to coals, they'd remove half of it and lower in two full foil wrapped steers. If I remember correctly it would take almost two full days to cook them. It was all turned into shredded beef. And you could eat it in taco's, burritos or many different ways.
It was seasoned with just S&P.
It was delicious, and a weekend long party. I was young, so I fished the creeks, and dove of rocks. LOL.

I been watching other videos of this and they put sand on the coals before the beef. Matter of fact, the sand looks to sorta wet (not that I plan on digging up my yard to do this.) :emoji_laughing: In another video I saw them using a bowl chopper to shred or pull. Bet that is nice.

Apparently $60 was not enough to bribe my parents to get me some. Half tempted to the take afternoon off to get some.

Wow, I can't imagine where one would find $10K worth of oxen anywhere. Evidently, Ohio?
I would bet some serious money that the FD hires Mennonite folks to do it for this sole purpose.
 
As fate would have it, work got slow so I cut out early and went! Guess what I am having for lunch right now?!?! Stuff is KILLER but absolutely zero smoke on it. Thought for sure there would be at least a hint. As expected the texture is insane with the bowl chop. It's good solo but glorious as sandwich. Somehow reminds me a church fundraiser shredded chicken sandwich. Very comforting. Woulda hung around but someone put manure down and it was intense. FD must have an enemy or 2. Very weird time of year to do that.

I have always loved then. I opted to just smoke some chuck for pulled here today.
