IBCA tips

im new to comps and frankly new to smoking too. theres a local IBCA compition were going to enter and vend (tri-tip sandwiches) to raise money for a mission trip for our church. Any pointers to IBCA would be very helpful I know its a half chicken and the usuals but any other hints or tips would be great . Tri tip is one of the categories and I wasn't sure the doneness it should be. Thanks guys
