I need help putting together a menu for tomorrow!

Philly 'burbs.
I have 25 people coming over tomorrow for a meal at 1PM EST. We had been planning on just roasting some turkey, but my wife suggested that I smoke some stuff; anything as long as it wasn't turkey.

Here is my issue: I need to decide what to smoke, how much of it, procure it, prep it, smoke it and have it all ready to be eaten in the next 28 hours starting NOW! I will need a variety of foods.

I have a Smokin-it #3 so I have a decent amount of smoking capacity to work with.

I knew exactly where to ask for help, so oh guru's of the smoke, I humbly ask for your help and suggestions!

App's like ABT, Moinks and Pork Shots, offer variety, are cheap and easy to prepare. My GoTo dinner party is Ribs! They are easy, not too expensive and can be rubbed tonight and 5-6 hours in the Smoker and you have Happy Campers...If you need Recipes I can help and I think SQWIB is one of the God's of Appetizers around here with ton of easy and step by step posts...JJ
 
you can not go wrong with ribs , also it is quick and easy maybe some smoked chicken , smoked pork steaks, smoked brats and hotdogs and if you time it just right  brisket . and for appetizers some smoked bologna , smoked roll of sausage , smoked beans and some smoked jalapeno's

just some idea's !!
 
All above are great suggestions. You can't go wrong with ABTs. A couple others are the no boil mac & cheese (done in smoker) and Dutch's Wicked Baked Beans. Maybe a fatty?
 
Salmon, just about everyone loves smoke salmon, if you havd leftover then you can make a smoked salmon dip

Give this a try....Good stuff!...JJ

Gingered Smoked Salmon Spread

1Lb Cream Cheese...Room Temp

1/2C Mayonnaise

1/4C Sour Cream

1Tbs Soy Sauce

1tsp Hot Sauce...Sriracha (Asian) or other

1/4tsp Black Pepper

1Lb Smoked Salmon...or other Smoked Fish, Flaked

1/4C Chopped Crystalized Ginger

1/4C Chopped Scallion

Process the first 6 ingredients until smooth...

For Fine Spread...add remaining and Pulse to desire consistency...

For Chunky Spread...Fold in remaining with a spatula...

For a Change of Pace!

Substitute... Ginger and Scallons with...

1/4C Chopped Fresh Dill

2T Chopped Capers

2T Chopped Fresh Chives
 
Collard greens with smoked turkey legs

Mac and cheese with smoke pork loin

Smoked brown sugar baked beans with thick cut bacon

Corn bread and sourdough stuffing with smoked oysters

Cranberry and apple chutney

German potato salad

Just a few ideas......
 
Its a lot of work but I love wrapping chicken livers in bacon and smoking. So worth the extra work and super cheap. If you have time soak the livers in milk for at least 8 hours. They melt in your mouth!

I really want to try a lasagna(ish) fatty, so there's an idea for you.
 
Smoking a Spiral Cut or other Cured Ham is super easy too. At 4 oz portions and roughly 60% yield, depending on Butt or Shank Portion, a 10-12LB Ham should be plenty for 25 people...JJ

Dutches Beans are the best!!!!

A Fatty is super easy to make and you can do them in different ways..

Recipe's can be found on this site..

Smoked hot dogs then cut up for a cocktail type wiener in a sauce of your choice would also be easy..

Ok, turned out that a good portion of the 25 were kids, so I had to cut back some. I ended up doing an 8 pound butt for pulling, 2 full racks of spares and two sections of beef short ribs (man I love those). I also did a side of artic char and about a half filet of a decent sized king salmon. The guests brought the various sides. Guest are still here so I need to get back to them, but thank you all for your suggestions! It was very successful!
