Saugus, California
It's Spring here in Gollyfornia.
Spring is when we get a lot of rain to help grow brush for Brushfire Season.
This year we seem to be getting Hit-Miss-Hit-Miss-Hit-Hit-Miss.... storms rolling in off the Pacific Ocean.
(Believe me, these would only qualify as light rain anywhere but here. But our star struck Weather People call them STORMS.... with great zeal... )
And a KILLER STORM when some dotard pours the water out of their boot into their face and drowns. (Hey, it's California, yeah they do that.)
I'm tired of wanting to do something with my smoker, but we keep getting these brush fire watering's.
So I need a Pole Barn for my smoker.:confused:

Anybody got one you could email me?

Looking forward to your build thread c farmer... with those two huge hams in your smoker touching, I can definitely see why you need a bigger one. Especially with that much fresh pig to process. That's why I built one with 36cu.ft.....<thumbs up>

Building a 6x8. That should be big enough

Yes indeed! Look forward to seeing it... <sorry for the highjack sonny>

No need to apologize.
If anybody has trouble hanging Ham's side by side in a 6' X 8' sm00khouse, I'd want to see the Hogzilla they came off of. ;)

They look sm00ky good to me!
The only sm00ker that's overloaded is one the smoke can't get out of. :D

Yep. That's the pic...
But Sonny, they were not hanging in a 6'X8' smokehouse....that's the one c farmer wants to build....

I am so looking forward to getting more trapped wild hogs. If it stays dry, the guy can set his trap, but if the rain train stays, he can't set the trap.

Well yeah, I got that it was in a smaller smoker. It's going to be fun watching Adam's build. With the reality of 6 hogs this year, he's gonna have to get busy.
Do you do a lot of wild hogs in a year?

They were in this smoker. Way to small. I will have around 6 pigs this year to do, why I need a smoke house

Wow, seems small to me for the task at hand, and daunting for the one ahead.
So build man, Build! We are almost 1/4 through this year, and it's comin up on planting season.
Even though I've raised meat before, I let the slaughter and butchering to the local butcher. And he did the smoking.
Sir Francis Bacon was a fine piggy! But I probably would have wrecked the smoking if I'd have done it back then.
(Heck, I wreck enough as it is now. ) But I eat the evidence so nobody knows. :p

So, with so much meat to process, are you considering a trolley system to run the meat on? With a smoke house, I could see you doing neighbors meat as well. ;)
Because if those hams are any example, you running a full blown smoke house will be a huge success!

I recently went from a UDS to a square box smoker. Much happier! But I'm very small time.
Nobody around here likes smoked meat as much as I do. So I can get away with my small batch ways.

Last year I processed 10 small hogs anywhere from 40~80lbs. that gave me 140~150lbs. of wild hog meat. I gave 45lbs. to Dad to mix with his venison for sausage and split the rest with my cousin. We make sausage with most of it. I currently have ~50lbs, of wild hog smoke sausage and ~30lbs of fresh sausage inda freezer.
